Nduja & Hot Honey

Nduja is a soft, spicy, spreadable salami from Calabria, and it has quietly taken over pizza menus for good reason. It melts into the cheese, spreading fiery, savoury flavour across the whole pizza. A drizzle of honey at the end turns the heat into something addictive.

Ingredients (per pizza)

  • 1 sourdough base
  • 70g raw tomato sauce
  • 80g mozzarella, torn and drained
  • 40–50g nduja, in small blobs
  • Runny honey (with a pinch of chilli for "hot honey"), fresh basil

Method

  1. Stretch the base, spread the sauce thinly, add the mozzarella.
  2. Dot the nduja in small pieces across the top — it will spread as it melts, so don't overload it.
  3. Bake at 250°C+ until charred and bubbling, 6–8 minutes.
  4. Finish with a drizzle of honey (warmed with a pinch of chilli flakes) and a few basil leaves.
Make hot honey in seconds: gently warm a spoonful of honey with a pinch of chilli flakes. It keeps, and it's brilliant on more than just pizza.
